not the message.

NOMO was born from a conviction: that ramen, prepared with the rigor of a tea ceremony, becomes something transcendent. Our founder spent three years in Fukuoka learning a single broth.

Each element — the fat blooming on the surface, the precise alkalinity of the noodle, the salt-cure depth of the tare — is a deliberate choice. Nothing is accidental. Nothing is convenient.

We built NOMO around the original Tokyo counter model: an open kitchen where you watch your bowl being made. No tables, no distractions. Just the steam, the sound of broth, and the person next to you.

The Ritual

How a bowl is made

Step 01

The Bones

Pork trotters and femur bones, blanched then roasted. Simmered at a rolling boil for 20 hours until the collagen becomes cloud.

Step 02

The Noodle

Thin, straight, high-alkalinity. Mixed at 5am. Rested 4 hours. Cut to order, cooked 90 seconds. The clock starts when it hits the water.

Step 03

The Chashu

Pork belly rolled tight. Seared dark. Braised 12 hours in tare, sake, mirin, soy. Pressed and chilled overnight. Torched to order.

Step 04

The Bowl

Tare first. Broth second — always exactly 380ml, 84°C. Noodles lifted and placed. Toppings arranged by weight, not by aesthetics.

Reservations for 17:00–22:00 sittings. Counter seats only. Walk-ins welcome but not guaranteed after 21:00.
